Bistro Blend, Lobster Bisque
Yield: 1 1/2 gallons
28 oz. Bistro Blend Soup Mix
2 ½ quarts Water
1 quart Clam Juice
1 qt. Heavy Cream
1 each Onion, small dice
2 cups Sherry
2 Tblsp Tarragon (Fresh Preferably)
2 lbs Lobster Meat (or Sensations)
- Bring water, heavy cream, Sherry, clam juice, and onions to a boil.
- Simmer for 5 minutes
- Using a whisk, mix in 1 packet of Bistro Blend Soup Mix (whisk until smooth)
- Add Lobster Meat and tarragon.
- Simmer for 5 minutes over medium heat – stirring frequently
